Recipe Thursday: Veggie Quesadillas

Mask the veggies in the cheese and watch the kids munch away!!!

Veggie Quesadillas Recipe

Ingredients:

1/2 lb. thinly sliced mushrooms

1 small zucchini thinly sliced

1 cup thinly sliced green onions

1 med tomato thinly sliced

1 can of corn

Corn or flour tortillas

2 1/2 cups shredded reduced fat Mexican blend cheese

3/4 cup salsa

Sour cream

1 tsp. dried basil

Pepper

Directions:

Spray pan with non stick olive oil spray.

Sautee mushrooms, zucchini, and onions until just tender.

Add the corn, basil, and tomatoes to the mix for an additional 2 minutes.

Fill tortillas with fixture and place into a lightly greased baking dish.

Cover with cheese.

Bake at 400 degrees for ten minutes and top with cheese and sour cream.

 

Toilet Paper Roll Creature

This is the perfect craft to do with young kids. They can practically do it themselves, and it is a wonderful way to let them use their imagination!

What you will need:

Toilet paper roll

Googley eyes

Pom Poms

Scissors

Tin foil

Sequins

Pipe cleaners

Glue

Any craft supplies your kids like to work with

Directions:

Give your child the toilet paper roll and neatly lay out all the supplies.

Ask them how they want to create their toilet paper roll creature and assist them in assembly!

 

 

Snack Time? Make Some Spiders!!!

I always struggle to make foods interesting. They may taste good, but that doesn’t mean they are fun to eat.

I decided to try my kids with these happy little spider snacks and they were a hit!

I hope you all enjoy them too!

Ingredients:

Ritz reduced far crackers

Peanut butter

Raisins

Chow Mein Noodles

Directions:

Spread peanut butter onto on cracker.

Place four chow mein noodles onto each side of the cracker.

Place another cracker onto of it.

Add two raisins for eyes.

 

Monday’s Blog Spotlight; Enjoying The Journey

 

How many of us moms get so wrapped up in routine that we forget about the spontaneous fun?

Instead of 8 p.m. bed time, would your kids flip for two more books, ice cream, or even just a few more minutes of “late night” cuddles?

Once again, Enjoying The Journey is in Monday’s Blog Spotlight! She has reminded me to take a step back and let my kids teach me. next time my boy’s are blowing milk bubbles, I think I will join in the fun rather than get upset at the mess they are making!

Thanks to Enjoying The journey I was also reminded that you can make spontaneous fun a learning experience as well (finger paint, measuring cups with water and funnels, etc…)

This mama really has her head wrapped around the fun times! It’s all about teaching children joy; Spontaneous Delight. As a super busy mom I appreciate the reminder to step back and enjoy the little things!
